Apple Cake

2 eggs
1 cup oil
2 cups white sugar
2 cups flour
2 tsp cinnamon
1 tsp vanilla
1 tsp baking soda
1/2 tsp salt
4 cups chopped apples
1 cup raisins
Mix oil and eggs together and set aside. Sift together sugar, flour, cinnamon, vanilla, soda and salt and then add to the oil mixture. Stir in the apples and raisins. Pour into greased 9 x 13” pan and bake 1 hour at 350 degrees.

Optional Icing
8 oz cream cheese
2 cups icing sugar
2 tsp butter
1 tsp vanilla
Mix together and spread over cooled cake.
