Caramel Popcorn My father gave us a few batches of this for Christmas this year and I still can’t get enough of it!
1 cup brown sugar
½ cup unsalted butter
¼ cup corn syrup
½ tsp baking soda
1 TBSP vanilla extract
8 cups popped corn
2 cups whole nuts (walnuts, pecans, almonds…whatever!)
Combine sugar, butter, corn syrup in heavy saucepan, bring to a boil & boil 2 minutes. Stir constantly. Remove from heat stir in soda and vanilla.  In large bowl, combine popcorn, nuts & sugar mixture.  Spread on a greased baking sheet.  Bake 275 oven for 25 – 30 minutes. Cool and break into bits.  Store in an airtight container - (if it makes it there!)
